Ακολουθεί ωρίμανση τουλάχιστον 24 μηνών σε φιάλη. Ένα εκλεπτυσμένο ερυθρό ξηρό κρασί, δημιουργημένο από έναν αρμονικό συνδυασμό τεσσάρων εκλεκτών ποικιλιών: Mourvèdre, Syrah, Cabernet Sauvignon και Μαύρο. Διακρίνεται για το ιδιαίτερο αρωματικό του προφίλ, όπου πλούσια φρούτα του δάσους συναντούν διακριτικές γήινες και πικάντικες νότες. Ένα κόκκινο ξηρό κρασί που παρασκευάζεται με εξαιρετική προσοχή στην πρώτη ύλη (σταφύλια). Το Constantinou Cabernet Sauvignon αποτελείται κατά 75% από σταφύλια Cabernet Sauvignon και 25% από σταφύλια Cabernet Franc. Ένα κρασί γεμάτο σώμα με ποώδεις χαρακτηριστικές νότες από τις δύο ποικιλίες σταφυλιών. Το στάδιο παλαίωσης γίνεται για 12 μήνες σε γαλλικά δρύινα βαρέλια και άλλους 12 μήνες σε φιάλη.

Ένα κόκκινο ξηρό κρασί που παρασκευάζεται με εξαιρετική προσοχή στην πρώτη ύλη (σταφύλια). Το Shiraz Constantinou παρασκευάζεται 100% από σταφύλια shiraz από εδραιωμένους και καλά καλλιεργημένους αμπελώνες. Ένα κρασί γεμάτο σώμα που περνάει 12 μήνες σε δρύινα βαρέλια και άλλους 12 μήνες σε μπουκάλια πριν την κυκλοφορία του στην αγορά. Η Μηλογαλακτική Ζύμωση βελτιώνει το οργανοληπτικό μέρος του κρασιού με γεύσεις βουτύρου. Αυτή η διαδικασία έχει την ικανότητα να φέρει το κρασί σε μικροβιακή σταθερότητα και να μειώνει την όξινη όψη του.
